Recipe of the Month Bees Knees Cocktail and Rhubarb Pie
Bees Knees Cocktail (final recipe from 2024 collection)

Ingredients
1 ½ T simple syrup recipe
2 oz gin
¾ oz fresh lemon juice
Honey Simple Syrup: 2 c honey to 1 c water, in pan and simmer until honey dissolves
Instructions
Fill cocktail shaker with ice. Add gin and lemon juice, then shake like silly. Add simple syrup and shake again. Use cocktail strainer to strain into glass over ice. Garnish with fresh lemon slice and enjoy!
Rhubarb Pie (2025 Recipe Collection)

Ingredients
2 10-inch pie crusts, unbaked
1 ½ c sugar
2 ½ T cornstarch
1 egg beaten
3 ½ c fresh rhubarb (you can use equal parts rhubarb and strawberries if desired)
Instructions
Slice rhubarb into 1-inch pieces and mix with cornstarch. Add egg and sugar and mix well. Line pie plate with one pastry crust. Add filling. Cover with the second pie crust. Seal the edges and slit a few openings in the top. Bake 30 minutes at 425 ° and then 15 to 20 minutes at 325 °. Cool on wire rack before slicing. Enjoy!
