Chipotle Quinoa Chili

1 T oil
1 onion, chop
4 garlic cloves, minced
2 T chili powder
1 T cumin
½ t cayenne
2 red peppers, chopped
1 c frozen corn
¼ c quinoa, rinsed
2 cans beans, drained and rinsed
2 cans (28oz) diced tomatoes, undrained
Heat oil in large pan, add onion and garlic. Cook for 5 minutes. Add seasonings, cook for I minute. Add tomatoes, beans, peppers, corn and quinoa. Stir and boil. Cover and simmer 25 minutes.
